..ok so it might be exactly the same poem i wrote at the rits carlton kapalua maui hawaii, ir at Casey's bake house keihi maui, but it fell in accurately with the boulibase (and the glorious saffron!!!) when i worked at mammas fish house, or Longhi's in wailea , having been the exec chef for Yorman Williams and his wife cherie in their four businesses gave me great oppertunity to bring my own creations out, from creol and cajun foods to some absolut fun and tasty foods that i still bring out on occasion. when the admin chef at the ritz asked me why i do not allow shouting in the kitchen, my reply remains the same, the eater can feel it on the food, and makes the offering worthless as dust... (yawwn aloha all from alaska.)

 packages and boxes

 not someone who can
boil a potato 
or follow a recipe
(and get it right sometimes)

I am a chef
 who can take a potato
transform it into
 an orgasmic experience
 
I am a bon vivant gourmet
who understands
 the art of food
 bringing  the ordinary
into the exceptional
 
I am a chef
 not a server
 of someone else's
steamer tray offerings
with focus group garnish

I am a Chef
 I do not compete
with anyone but myself
without difference
i serve all the same
as serving god

I have always said food should be prepared with positive thoughts in mind. With love, and crafted with intuity and creativeness. This i think you do. The poem is just an extension of your passion to do it and to do it right. Cook on........Tlady

I envy the love you have for your work. It seems as a calling you have found for your life. As you see the care and the strive for perfection as it's shown in the last stanza.
